Thanksgiving 2016 Recipes

Creamy Mashed Potatoes Recipe :-Creamy Mashed Potatoes. Who would want some creamy, yummy mashed potatoes?


Ingredients:


  • 5 lbs. White or Yukon Gold Potatoes, peeled (cut into 2” chunks)

  • 2 1/2 Tbsp. Salt

  • 12 Tbsp. Unsalted Butter, at room temperature (cut into pieces)

  • 1/2 to 3/4 Cup Heavy Cream

  • 1/4 tsp. Ground Nutmeg

  • 3/4 tsp. Black Pepper

  • 1 Cup Sour Cream

  • 1 tsp. Kosher Salt



Directions:


  1. In a large pot, place the potatoes and salt.  Cover the potatoes with cold water.  Then bring to a boil.  Then reduce the heat and let them simmer until tender, 20 to 25 minutes.
  2. While waiting, in a saucepan, over medium heat, place in the butter and 1/2 cup of the heavy cream until the butter melts.
  3. When the potatoes are done, drain the pot, and add the butter/cream mixture, nutmeg, pepper, sour cream, and kosher salt.  Mash the potatoes with a handheld masher, you can add more cream if the consistency is too thick, but only 1 Tbsp. at a time.

Mashed Potato Perfection Recipe : These might be the best mashed potatoes I’ve ever tried.  Literally, perfection.

Ingredients:


  • 4 lbs. Yukon Gold, cut into 3” pieces (peeled)
  • 1 tsp. Salt
  • 8 Garlic Cloves, peeled and halved lengthwise
  • 1 1/4 Cups Milk or Half-and-Half
  • 3 Tbsp. Unsalted Butter
  • 2 Tbsp. Extra-Virgin Olive Oil
  • Salt
  • White Pepper, freshly ground


Directions:


  1. In a large pot, boil water, adding the potatoes, salt, and garlic, partially covering over medium heat for 15 to 20 minutes.  You may drain the potatoes and garlic when they are tender to a fork.
  2. Over high heat, cook, tossing the potatoes for 1 to 2 minutes until all the moisture is evaporated. Then transfer to a large bowl, and mash them with a potato masher.
  3. In a medium saucepan, heat the milk, butter, and oil over medium heat until the butter has melted.  Add this to the potato bowl, and whip with a whisk to a smooth consistency.
  4. Lastly season with salt and pepper, and transfer to a serving bowl.
  5. If you want to get inventive you can add Parmesan cheese, or leeks sautéed in olive oil to the mashed potatoes.

In a saucepan, place the potatoes and garlic, cover them with water, and bring it to a boil. Then reduce the heat, and let them simmer for 20 minutes; draining when done. In a mixing bowl, place the potatoes and garlic, and add the butter, cheese, milk, salt, and pepper; beating well with a mixer until the potatoes are smooth.

Remove the pot from the heat.
  2. With the help of the potato masher, mash the potatoes. Add milk( Luke warm) and butter to the potatoes. Keep mashing the content until you get a smooth and fluffy dish. Sprinkle salt and black pepper to the dish according to taste.

Quartered Carrots 1kg
Olive oil 1 tbsp
Maple syrup 4 tbsp
Chopped pecans 25g
Direction
  1. Preheat the oven to 220C/200C. Place the carrots on a large baking tray, toss with the oil and plenty of salt, then spread out in an even layer. Cover with foil and roast for 10 mins, then remove the foil and cook for 20 mins more.
  2. Sprinkle some nuts and drizzle it with maple syrup. Put it in the oven until the carrots are golden and soft with toasted pecans for at least 10 minutes

Garlic, Minced                                                   4 cloves
White Mushrooms, Quartered                        1 pound
Salt                                                                      1/2 teaspoon
White Wine                                                        1 cup
Flour                                                                   1/3 cup
Turkey (or Chicken) Broth                             4 cups
Cream Cheese                                                   1 block 8 Ounce
Cooked (leftover) Turkey, Shredded Or Diced     3 cups
Finely Chopped Black Olives                         1 cup
Frozen Green Peas                                         1-1/2 cup
Bacon, Fried And Cut Into Bits                     4 slices
Monterey Jack Cheese, Grated                    1 cup
Parmesan Cheese, Grated                             1 cup
 Salt And Pepper                                            To taste
 Extra Broth For Thinning                            1 cup
 Panko Bread Crumbs

Directions

  •     Cook the pasta until not quite done as directed on the package, rinse and drain the remaining water from the pasta and keep it aside for later use.
  •     Take a large pot, put and heat some butter, add and sauté garlic for some minutes. Add and sauté mushrooms and salt for few more minutes. Pour the wine and cook the content until the gravy reduces to half on medium-high heat.
  •     Sprinkle some flour on the mushrooms and stir for another minute. Pour in the broth and stir, cooking for another few minutes until the roux thickens.
  •     Turn the heat to Medium-low. Cut cream cheese into pieces and add it to the pot. Stir it to melt. Add the remaining ingredients now, leftover turkey, the olives, the peas, the bacon, and the cheeses. Stir the content and add salt and pepper to the taste.
  •     Now add the spaghetti cooked earlier and stir it to mix. Splash in more broth as needed, the dish need some extra moisture as it will get heated in the oven and loses it. You can also keep it a little soupy; can also add up to 2 cups of liquid if you feel like.
  •     Now pour the mixture into a large baking dish and sprinkle Panko crumbs on the top. Bake in the oven at 350 degrees F for around 20 minutes, or till the casserole is bubbly and the crumbs have turned to golden brown.
